Feta is a young cheese from cow’s or sheep milk; tangy, salty, and smooth. It usually comes in brine, which is an important preserving medium. Always ensure the feta has enough brine covering the cheese bricks. 

If you are making homemade kefir and have an excess of whey, you can use it instead of the brine and it will keep the cheese fresh. 

Alternatively, the whey from the yogurt can be added to the brine.
