How to Make Green Beans with Tomatoes and Garlic
Step 1: Preparing the vegetables
Wash and clean the beans. Cut the ends and remove any strings (if any) that are running along the sides.

Trim the green beans and cut them diagonally into slivers (Pic. 1). Slice the onion into half-moons (Pic. 2) and mince the garlic. Slice the tomatoes and chop the parsley.
Remove the tomato skin.
Step 2: Sauté onions and simmer the beans

In a large sauté pan, heat olive oil over medium heat. Add the onions and sauté until just translucent (Pic 3). Add the garlic and cook for another minute until fragrant.
Add the green beans and stir to coat (Pic. 4).

Season with salt and pepper (Pic. 5). Pour in just enough water to barely cover the beans (Pic. 6). Cover and simmer on low for 15–20 minutes.
Step 3: Add Tomatoes and Finish Cooking

Add the handful of chopped parsley (Pic. 7) and sliced tomatoes (Pic.8). Cover and simmer for another 10 minutes, or until the beans are tender and the flavors have come together.
Step 4: Garnish and Serve

Taste and adjust seasoning if needed. Sprinkle with fresh parsley and herbs. Serve warm, or let cool to room temperature.

- Salt and black pepper to taste

- Water
Instructions

- Add the minced garlic and sauté for another minute.
- Add the green beans and stir to coat in the oil.
- Pour in just enough water to barely cover the beans. Season with salt and pepper.
- Cover the pot, lower the heat, and cook for 15–20 minutes.
- Add the sliced tomatoes and a handful of chopped parsley. Cover and continue to cook for another 10 minutes, or until the beans are tender.
