Instructions
Heat olive oil in a large pot or deep pan. Add the sliced onions and sauté until slightly translucent.
Add the minced garlic and sauté for another minute.
Add the green beans and stir to coat in the oil.
Pour in just enough water to barely cover the beans. Season with salt and pepper.
Cover the pot, lower the heat, and cook for 15–20 minutes.
Add the sliced tomatoes and a handful of chopped parsley. Cover and continue to cook for another 10 minutes, or until the beans are tender.
Adjust seasoning if needed and sprinkle with fresh parsley before serving.
Serve warm or at room temperature.

Trimming the beans: Most of the commercial beans now are stringless, but you still need to trim both ends of the beans.
