Green Beans with Tomatoes

Ingredients

  • 1 kg green beans cut into diagonal slivers
  • 1 each small onion sliced into half-moons
  • 2 each tomatoes sliced
  • 2 cloves garlic minced
  • 2 tablespoon Olive oil
  • Salt and black pepper to taste
  • Fresh parsley chopped (some for cooking, some for garnish)
  • Water

Instructions

  • Heat olive oil in a large pot or deep pan. Add the sliced onions and sauté until slightly translucent.
  • Add the minced garlic and sauté for another minute.
  • Add the green beans and stir to coat in the oil.
  • Pour in just enough water to barely cover the beans. Season with salt and pepper.
  • Cover the pot, lower the heat, and cook for 15–20 minutes.
  • Add the sliced tomatoes and a handful of chopped parsley. Cover and continue to cook for another 10 minutes, or until the beans are tender.
  • Adjust seasoning if needed and sprinkle with fresh parsley before serving.
  • Serve warm or at room temperature.

  • Trimming the beans: Most of the commercial beans now are stringless, but you still need to trim both ends of the beans.
  • Don’t rush the sauté. Let the onions and garlic gently release their sweetness—it builds the foundation of flavor.
  • Always use good olive oil. This dish is simple, so the quality of your ingredients really shines.
  • Use ripe tomatoes when in season—they add a natural sweetness and acidity that balances the green beans.
  • Let it rest! This dish actually tastes better after it sits for a while and the flavors meld.
