  • Granulated sugar: Regular granulated sugar is the best choice for making simple syrup. Do not use powdered or confectioners’ sugar.
  • Fresh tarragon: You must use fresh tarragon for this syrup. Dried tarragon no longer has the essential oils that infuse the syrup.
  • Lemon or lime juice: Prevents the syrup from crystalizing and also balances the sweetness of the sugar.
  • Food color: Green food coloring is an optional choice if you want to impart a bright green color to the syrup.

How to Make Tarragon Syrup Step by Step

Step 1: Prepare the tarragon

Wash and clean the tarragon. Roughly chop the bunch and set it aside.

Step 2: Prepare a simple syrup

In a small pot over medium-high heat, whisk together sugar and water until the sugar dissolves. Bring the syrup to a boil and let it simmer for 10 minutes. Add the lemon juice, cook for an additional minute, then remove from heat. Stir in the chopped tarragon and let it steep in the syrup until it cools.

Once the syrup has cooled down, strain it through a wire mesh strainer. At this stage, you can bottle it and store it.

If you want to add color, you can use food coloring or a natural green pigment.

For natural color: Briefly blanch the spinach, remove it from the water, and either chop or blend it. Using gauze or paper filter, squeeze out as much liquid as possible.
