Shirred Eggs in Tomato Confit

INGREDIENT  LIST  🥚 Egg  🍅 Tomatoes  🧈 Butter  🧅 Shallot  🌿 Fresh herb  🧂 Seasoning

Chop shallots and tomatoes. Sauté shallots in melted butter. Add tomatoes and cook down.



Spoon a generous amount of tomatoes into ramekin. Create a "well" in the center and crack the egg inside.
