Homemade  Lemon Curd

Prepare the lemons; for this recipe you need both zest and the juice.

Zest the lemon and then squeeze all the juice.

Whisk the egg yolks with sugar. Stir in the lemon juice and the zest.

Place the pot on a stove and cook at medium heat, constantly stirring  with a spoon.

Transfer the cooked curd into a bowl, and lay a plastic film over. Chill until ready to use.

When ready to serve, transfer into a glass bowl and serve.

Use curd for a pie. Add to ice creams and parfait. Serve with fresh scones.  Use as luscious filling.
