Roasted Eggplant Dip

 Roasted Eggplant Dip "Mutabal" is perfect as a dip, a spread, or a scrumptious side dish.  Rich and smoky roasted eggplant meets creamy tahini and zesty lemon juice. 

🍆 Eggplants 🫑 Green Bell Pepper  🍯 Tahini 🍋 Lemon 🧄 Garlic 🧂 Salt and pepper 🫒 Olive Oil 🌶️ Paprika

GROCERY LIST

Pierce the skin of the eggplants.  This will help the steam to escape and prevent the eggplant from bursting.

Fire roast the eggplants using a gas grill, fire pit, or charcoal grill.

Remove from the grill, cover, and let cool.

Peel off the skin from the eggplants and peppers. Reserve all the liquid.

Whip the tahini. Puree eggplants, bell pepper, garlic in food processor.

Add the lemon juice and seasoning. Gradually fold in the tahini.
