Armenian Lenten Tolma

with  Beans & Lentils

Armenian Lenten Tolma  – a genuine vegan dish, filled with a blend of lentils, chickpeas, kidney beans, and aromatic herbs, offers a gratifying, protein-rich delicacy, served warm or chilled. 


🧅 Onion  🍲 Lentils  🟠 Chickpeas 🫘 Red Beans 🌾 Bulgur  🍇 Grape leaves  🌿 Parsley/cilantro  🔴 Cranberries

In a big bowl combine the beans, chickpeas, and lentils. 


Add sauteed onions, chopped cilantro,  bulgur, and cranberries. 


Place the grape leaves on a surface. Put a spoonful of stuffing on top of each leaf. 


Bring the leaf base over the filling, fold the sides, and roll into cigar shaped little logs. 


Arranged the tolmas in a cooking pot along the perimeter; spiral inwards.


Pour the brine over the prepared vegetables and weight them down. Store in a cool place.
